Because of the birthday extravaganza the weekend before St. Patty's day, we missed out on the local Irish celebrations and parade. But we didn't let that stop us from celebrating like little leprechauns on the 17th. Grandma Decker provided the new shirts and Mommy provided the food. :)
We enjoyed some Broccoli Potato Soup for dinner. It may not be Irish, but hey, it's green and I had lots of broccoli and potatoes that I needed to use up.
I tried out a new healthy recipe that was not your typical creamy, cheesy, fat-laden soup (as you can probably tell by looking at the picture above). I was nervous about how it would turn out, but we all really enjoyed it! It was a light and refreshing change from the norm. If you're interested, you can click HERE for the recipe. We also made some Irish Wheaten Bread:
They say it's what Irish people really eat over there in Ireland! It was fun to feel authentically Irish while making and eating the bread. The bread was quick and easy to make (no rising required). It tasted great fresh out of the oven, but leftovers weren't my favorite. Click HERE if you would like the recipe.

On March 29th, Annie turned 2 and a HALF. While I was yapping on the phone to my sister in another room (we were trying to make Easter plans), she decided to commemorate her special half birthday with her very own haircut!
Yes! Her first mullet!! People have assured me over and over again that it could have been MUCH worse. And they're right. In the book of parenting disasters, this comes in low on the list.
But still... my baby has a mullet. Here's a sneak peak of a fun activity that we did over spring break. Annie looked like she was straight out of the Tennessee backroads. How can you not love this awesome face?!

I was just thinking while I was looking at the pictures in your post that Annie's hair was so long for a 2 year old. So can we start calling Annie "Billy Ray"? :)
The combination of Annie's mullet pics and her face in that last one and Melissa's comment about calling her "Billy Ray" has me totally giggling over here. That girl. I think you're dealing with it well. I'm afraid the vain part of me would be near devastation. Over-exaggeration, but sort of true.
p.s. I've got to try that Broccoli soup. Sounds/looks yummy.

Great update. I love hearing about your St. Patrick's day and Annie's mullet. Houston cut his bangs to the top of his scalp by himself but we were able to buzz his hair to fix it - can't really buzz Annie's hair so I hope Annie's hair grows fast! Now that Houston's older when we talk about him cutting his own hair he laughes about it-- I'm sure Annie will too someday.

HAhaha! Oh man, I'm sorry about the haircut, but that's too hilarious! If it makes you feel better, my little Natalie's hair grows PERMANENTLY in a mullet! Not kidding! Nothing in the front grows. Ever. Sigh...
